Ingredients

  • 1 cup cauliflower florets
  • 1 cup carrot, diced
  • 1 cup green beans, chopped
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1 cup bell peppers, diced (any color)
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh coriander leaves for garnish

Instructions

Prepare Vegetables

Wash and chop all the vegetables as per the measurements mentioned.

Keep them aside in separate bowls.

Cooking Process 

Heat oil in a large pan or kadhai over medium heat.

Add cumin seeds and mustard seeds. Allow them to splutter.

Add finely chopped onions and sauté until they turn golden brown.

Add ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.

Add all the chopped vegetables (cauliflower, carrot, green beans, peas, potatoes, bell peppers) to the pan.

Mix well and sauté for 5-7 minutes until the vegetables are partially cooked.

Spice it Up

Add turmeric powder, red chili powder, coriander powder, and salt. Mix thoroughly to coat the vegetables with the spices.

Continue to cook for another 5-7 minutes until the vegetables are tender but not mushy.

Garam Masala Magic

Sprinkle garam masala over the vegetables and stir well.

Adjust salt and spice levels according to your taste.
