Chicken angara-Mala Flavors

Ingredients

  • 500g chicken, cut into bite-sized pieces
  • 2 large onions, finely sliced
  • 2 tomatoes, pureed
  • 1/2 cup yogurt
  • 1/4 cup cooking oil
  • 1/4 cup ghee (clarified butter)
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon red chili powder
  • 1 tablespoon coriander powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 1 cup thick yogurt
  • 1 tablespoon red chili powder
  • 1 tablespoon ginger-garlic paste
  • Salt to taste

Instructions

Marinate the Chicken

In a bowl, combine the yogurt, red chili powder, ginger-garlic paste, and salt to create a smooth marinade.

Coat the chicken pieces with the marinade, ensuring they are well-covered.

Allow the chicken to marinate for at least 2 hours, or preferably overnight in the refrigerator.

Prepare the Angara Gravy

Heat oil and ghee in a pan over medium heat.

Add sliced onions and sauté until golden brown.

Add ginger-garlic paste and sauté until the raw aroma disappears.

Incorporate tomato puree and cook until the oil separates from the masala.

Spice it Up

Lower the heat and add red chili powder, coriander powder, turmeric powder, cumin powder, and garam masala.

Cook the masala on low heat, stirring continuously, until it releases a rich aroma.

Add Yogurt and Marinated Chicken

Gradually add yogurt to the masala, stirring continuously to avoid curdling.

Add the marinated chicken pieces and cook until they are browned on all sides.

Infuse Smoky Flavor

Create a well in the center of the chicken mixture and place a small, heatproof bowl.

Heat a piece of charcoal until red hot and place it in the small bowl.

Drizzle a few drops of ghee over the charcoal and quickly cover the pan. Allow the smoky flavor to infuse into the chicken for a few minutes.

Finish with Kasuri Methi and Garnish

Crush kasuri methi between your palms and sprinkle it over the Chicken Angara for an added layer of aroma.

Garnish with fresh coriander leaves.

Serve and Enjoy

Your Chicken Angara is now ready to be served! Pair it with naan, roti, or steamed rice for a complete and satisfying meal.

Chicken Angara is a dish that brings together the warmth of spices, the richness of yogurt, and the depth of smoky flavors. With a bit of patience and a love for bold tastes, you can recreate this restaurant-style delight in your own kitchen.
