  • 200 grams noodles (egg or rice noodles)
  • 1 tablespoon oil
  • 1 clove garlic (finely chopped)
  • 1 cup vegetables (e.g., carrots, bell peppers, cabbage, thinly sliced)
  • 2 green onions (chopped)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil (optional)
  • Salt and pepper to taste
  • Chopped fresh cilantro
  • Sesame seeds (optional)

Instructions

In a bowl, coat the paneer cubes with cornflour and all-purpose flour. Shake off excess flour.

Heat oil in a pan and fry the paneer cubes until golden brown. Remove and drain on paper towels.

In the same pan, add a bit more oil if needed. Sauté garlic, ginger, and green chili until aromatic.

Add onions and bell peppers, and stir-fry until they start to soften.

Mix in the soy sauce, chili sauce, tomato ketchup, vinegar, and sugar. Cook until the sauce thickens slightly.

Add the fried paneer cubes and toss to coat them in the sauce. Adjust salt and pepper to taste. Set aside.

Cook the noodles according to package instructions. Drain and set aside.

Heat oil in a separate pan or wok. Sauté garlic until fragrant.

Add the vegetables and stir-fry until they’re tender but still crisp.

Add the cooked noodles, soy sauce, and sesame oil. Toss well to combine and heat through.

Gently fold the Chilli Paneer mixture into the noodles.

Cook for another 2-3 minutes, allowing the flavors to blend.

Garnish with chopped cilantro and sesame seeds, if desired.
