Karanji-Mala Flavors

Ingredients

For the Dough

  • 2 cups all-purpose flour (maida)
  • 4 tbsp ghee (clarified butter)
  • A pinch of salt
  • Water (as needed to make a semi-soft dough)

For the Filling

  • 1 cup desiccated coconut
  • 1 cup powdered sugar
  • 1 cup roasted and crushed nuts (cashews, almonds, pistachios)
  • 1 tsp poppy seeds
  • 1/2 tsp cardamom powder
  • 2 tbsp ghee

For Frying

  • Vegetable oil or ghee

Instructions

Step 1: Prepare the Dough

In a mixing bowl, combine the all-purpose flour, ghee, and a pinch of salt.

Gradually add water and knead to form a semi-soft dough.

Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Step 2: Make the Filling

In a pan, heat ghee and add desiccated coconut.

Roast the coconut until it turns golden brown.

Add powdered jaggery, crushed nuts, poppy seeds, and cardamom powder. Mix well.

Cook the mixture until the jaggery melts and everything combines into a sticky, sweet filling. Allow it to cool.

Step 3: Shape the Karanji

Divide the dough into small lemon-sized balls.

Roll each ball into a small disc, keeping the edges thinner than the center.

Place a spoonful of the filling in the center of the disc.

Fold the disc in half, sealing the edges to form a crescent shape. You can use a fork to crimp the edges for a decorative touch.

Step 4: Fry the Karanji

Heat oil or ghee in a pan for deep-frying.

Fry the Karanjis on medium heat until they turn golden brown and crisp.

Remove and place them on a paper towel to absorb excess oil.

Step 5: Enjoy the Sweet Delight!

Let the Karanjis cool before serving. These sweet, crunchy treats are ready to be shared with family and friends during your Diwali celebrations. Serve with love and savor the joy of homemade goodness!

Bringing the essence of Diwali into your kitchen, this Karanji recipe is sure to be a hit among your loved ones. Enjoy the festivities with this delightful sweet treat and create lasting memories. Wishing you a Happy and Sweet Diwali! 🪔🎉 #DiwaliRecipes #HomemadeSweets #FestiveTreats
